Delicious Mini Meatloaves
Prep Time: 15 minutes
Cook Time: 45 minutes
Ingredients
1/2 medium onion, finely chopped
1 teaspoon olive oil
2 teaspoons fresh thyme, chopped
1 pound Laura's 92% Lean Ground Beef or 96% Lean Ground Round
2 egg whites
1 (8-ounce) can tomato sauce, divided
1 tablespoon tomato paste
2 teaspoons Worcestershire sauce
1 cup Melba toast, crushed
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup ketchup
Directions
1. Saute onion in hot oil over medium-high heat in a small skillet. Add thyme and cook 1 more minute.
2. Add onion mixture to beef in a large mixing bowl. Add egg whites, 1/2 cup tomato sauce and next 5 ingredients, mixing well.
3. Transfer beef mixture to 2 (4 x 2 1/2-inch) lightly greased loaf pans. Bake at 400ºF for 35 minutes.
4. Combine remaining tomato sauce and ketchup in a bowl; spread over each meatloaf. Bake 5 more minutes or until heated.
Makes 4 servings.
Cooking Tip: These meatloaves freeze very well after baking. Make 2 or 3 in advance and have dinner in a flash! Also, if you use dried thyme in the place of fresh, use just 1/2 teaspoon.
