Couscous with Beef and Vegetables

Ingredients
1 (5.9-ounce) package Parmesan couscous mix
1 1/4 cups vegetable broth
1 pound Laura’s 92% Lean Ground Beef or 96% Lean Ground Round
1 small onion, chopped
1 zucchini, sliced
1 yellow squash, sliced
1 clove garlic, minced
1 cup cherry tomatoes, quartered
1 cup chopped asparagus
1/4 cup fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon freshly lemon pepper
1/4 teaspoon crushed red pepper
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil
Directions
1. Prepare couscous in vegetable broth according to package directions.
2. Cook beef and onion in a large nonstick skillet over medium-high heat 5 minutes or until beef is browned; drain.
3. Add zucchini and next 8 ingredients and sauté 5 to 7 minutes or until tender. Stir in couscous and top parsley and basil.
Makes 4 to 6 servings.
Cooking Tip: Vegetable broth adds a slow-cooked flavor to a quickly cooked dish. Use the boxed broth, not bouillon cubes, to avoid MSG.
