Braised Beef Barbecue

Ingredients
2-3 pounds Laura's Lean Round Meat
BBQ spices (pre-mixed spices found in the spice section)
2 tablespoon salt
2 tablespoon granulated garlic
2 tablespoon pepper
1/2 cup olive oil
1/2 cup honey
4 cups beef stock
1 large onion chopped
4 ribs of chopped celery
4 carrots, peeled and chopped

Directions
1. Preheat over to 300 degrees.
2. Rub the meat with the BBQ spices, salt, garlic, and pepper.
3. Heat the oil in a roasting pan that can be covered. Once the oil is hot, place the beef into the oil and sear on all sides until browned. Then, add the honey, beef stock, onions, celery, and carrots.
4. Place in oven at 300 degrees for 3-4 hours or until the meat pulls apart with a fork.
5. Remove liquid and vegetables, then pureé (make into a watery soup or sauce). Pour over meat and serve.

Makes 10 servings.

Cooking Tips: Searing meat is a great way to lock in flavor and natural juices. Make sure your pan is hot, almost smoking. The idea is to brown the meat on the outside, not to fully cook it. Searing will take about 2 minutes on each side depending on the heat of your pan.
