Beef and Black Bean Tostadas

Ingredients
1 pound Laura's 92% Lean Lean Ground Beef or 96% Lean Ground Round
1 small onion, chopped
1 teaspoon ground cumin
1 teaspoon chili powder
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
6 (6-inch) corn tortillas
1 cup shredded lettuce
1/2 cup chopped tomato
1/2 (15-ounce) can black beans, rinsed and drained
1 avocado, seeded and chopped
1/3 cup Mexican cheese blend
Salsa and Sour cream (optional)
Directions
1. Brown ground beef and onion over medium-high heat about 5 minutes or until browned and onion is tender.
2. Add cumin and next 3 ingredients and cook 5 minutes.
3. Place tortillas directly on middle rack of a 350°F for 7 to 10 minutes (tortillas should still be pliable).
4. Top tortillas with lettuce, beef mixture, tomatoes, beans, avocado, cheese and salsa and sour cream, if desired.
Makes 6 servings.
Cooking Tips: Cilantro's taste is a fragrant mix of parsley and citrus. Generally you can't substitute dried cilantro for fresh - it lacks the flavor of fresh cilantro.
