Homestyle Meatballs
Ingredients
1 1/2 pounds Laura's 92% Lean Ground Beef or 96% Lean Ground Round
3/4 cup bread crumbs
2 1/2 tablespoons minced dried parsley
3 cloves minced garlic
1 egg
1/2 teaspoon nutmeg
1/4 teaspoon pepper
1/4 teaspoon salt
1 carrot, finely chopped
1 onion, finely chopped
2 tomatoes, finely chopped
1 green pepper, cut in strips
2 cups beef broth
Directions
1. Preheat oven to 400° and coat large roasting pan with cooking spray.
2. Combine first eight ingredients, beef through salt. Form into one-inch balls.
3. Place meatballs on roasting pan and bake for 15 minutes or until browned. Gently loosen meatballs from the bottom of the pan.
4. Combine remaining ingredients and pour over meatballs. Cover meatballs and bake for 20 minutes. Remove cover and bake additional 10-15 minutes to thicken sauce.
Makes 6 servings.
Cooking Tip: Be sure that your vegetables are finely chopped. A food processor is recommended for best results. In order to be sure your meatballs will turn out tender, handle the meat as little as possible – overhandling causes toughness.
