Herbed Beef and Vegetable Kabobs

Ingredients
2 tablespoons minced fresh thyme
2 tablespoons minced fresh oregano
2 tablespoons minced fresh parsley
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 1/4 pound Laura’s Lean Sirloin Steak, cut into 1-inch cubes
1 (8-ounce) container baby Portobello mushrooms, stems removed
1 pint cherry tomatoes
1 purple onion, sliced in 1-inch pieces
1/2 cup lemon juice
2 cloves garlic, minced
1 tablespoon Dijon mustard
1 teaspoon olive oil
Directions
1. Combine first 5 ingredients in a small bowl; crush mixture with the back of a spoon, and rub over beef cubes. Thread beef, mushrooms, tomatoes and onion onto 4 (12-inch) skewers.
2. Combine lemon juice and next 3 ingredients and drizzle over kabobs. Cover and refrigerate 2 hours.
3. Spray grill with cooking spray. Place skewers on grill; grill without, grill lid, over medium-high heat 5 minutes on each side. Garnish with fresh oregano, if desired.
Makes 4 to 6 servings.
Cooking Tip: In order to make sure all your ingredients are cooked to perfection, put each type of food on a separate skewer. Make sure to leave about ¼ inch between pieces (especially meat) to ensure thorough cooking.
